With Thanksgiving right around the corner, it’s hard to keep up with your healthy eating habits. These protein-packed, gluten-free pumpkin pancakes will make you forget you’re eating something healthy. Bonus: they are super easy to make! Enjoy.
– 1 cup pumpkin purée
– 1/4 cup almond milk
– 1 tsp vanilla extract
– 1/2 tsp cinnamon
– 1/2 tsp nutmeg
– 3 egg whites
– 1 cup raw oats (gluten-free)
– 1 tsp baking powder
– 2 scoops vanilla protein powder (optional, vegan & gluten-free options)
Mix all ingredients in a bowl or blender. Cook in a pan. Serve with berries or toppings of your choice.
Serving Size: 3 medium pancakes. Around 205 calories per pancake.
