Get mango-licious! This past week I made this amazing mango salsa dish that works great on top of meats or as a side dish. I love the sweet combination of mango with white onions and citrus. The Mango Board sent me an awesome box of mangos and I love trying out different recipes with this fruit for my meal preps.

Ingredients:
1 can (15 oz) black beans
½ can (15 oz) sweet corn
2 mangos, diced
1 cup chopped white onions
1-2 handfuls of cherry tomatoes (sliced)
2 limes
Cilantro, to taste
Himalayan salt (optional)

Preparation:
Mix all ingredients in a bowl. Squeeze lime juice on top and sprinkle on cilantro.

 

How simple and easy is that? And it’s such a good combination!
