Paleo Chicken Soup with Kale


Ingredients

  • 2 Tbsp Avocado Oil
  • 1.5 Cups Medium Onion Chopped
  • 1 ½ Cups Carrots Chopped
  • 2 Cups Chopped Kale
  • 8 Celery Stalks
  • 1 Tsp Salt More to taste
  • 1/2 Tsp Black Pepper More to Taste
  • 1/2 Tsp Dried Thyme
  • 1/4 Tsp Dried Oregano
  • 4 Cups Chicken Broth
  • 1 Whole Chicken

Instructions

  1. Using your Instant Pot, hit the saute button and add the veggies, seasoning and avocado oil. 

  2. Turn off the saute feature, add the chicken, 4 cups of chicken broth and 4 cups of water. 

  3. Seal the lid and set for 25 minutes

  4. Remove the chicken from the soup, add the meat back in.

  5. Stir and serve!
