Ingredients
- 2 cups cherry tomatoes
- 4 cloves garlic (kept whole)
- Fresh basil leaves
- Salt + pepper
- 1–2 tbsp freshly grated Parmigiano Reggiano
- 1/4 cup starchy pasta water (saved from cooking pasta)
- Optional: Calabrian chilis (for a little heat)
- Pasta of choice
Instructions
1. Start your pasta first
Bring your pasta to a boil and cook it until about ¾ done (al dente). Don’t drain the water — you’ll need some of that starchy pasta water for the sauce.
2. Heat your pan
Use a stainless steel pan and heat it until it passes the water drop test (water beads and glides across the surface).
3. Build the base
Add olive oil, then toss in the cherry tomatoes and whole garlic cloves. Keeping the garlic whole helps prevent burning.
4. Add flavor
If using, add Calabrian chilis here. Then add salt and pepper.
5. Break down the tomatoes
Stir occasionally until the tomatoes soften. Once they’re tender, gently crush them with a spoon or spatula to create your sauce. Add basil to sauce.
6. Finish cooking the pasta in the sauce
Add your ¾ cooked pasta directly into the pan. Pour in a small scoop of starchy pasta water — this helps emulsify the sauce and gives it that silky, restaurant-quality texture.
7. Finish with cheese
Grate fresh Parmigiano Reggiano over the top, toss everything together, and serve immediately.
