These healthy, oatmeal blueberry banana muffins are the perfect on-the-go snack or breakfast treat. With only clean ingredients, each muffin is under 200 calories and a mouthful of goodness. So skip the fake, sugary cereals and hop on the oatmeal muffin bandwagon! They are packed in nutritious calories and are high in fiber (Win, WIN!).
Ingredients:
2 1/2 cups old fashioned oats
1 cup plain low fat greek yogurt (like 2% fage)
2 eggs
1/2 cup honey
2 tsp. baking powder
1 tsp. baking soda
2 Tbsp. ground flax seeds
1 tsp. vanilla
2 ripe bananas
1 1/2 blueberries
1/4 cup stevia (optional)
Instructions:
- Preheat oven to 375 degrees fahrenheit.
- Blend all ingredients together except the blueberries in a blender or food processor.
- Mix in blueberries but don’t blend.
- Bake for 10-14 minutes or until a toothpick comes out clean.
165-170 calories per muffin
These muffins are a perfect pairing to a hot cup of coffee.
