Breakfast 1 – Cottage Cheese Smoked Salmon Bowl

Cottage Cheese Smoked Salmon Bowl

Servings 1

Ingredients

  • 2 oz smoked salmon
  • 1/2 cup low fat cottage cheese
  • 1 whole egg
  • 1/2 cup cucumber, chopped
  • 1/2 cup cherry tomatoes, chopped
  • dash of everything bagel seasoning
  • pinch of sea salt
  • 1 tsp baking soda

Instructions

  1. Put the egg in a pot with a lid. Pour cool water over the egg until fully submerged and add the baking soda to the water. 

  2. Put the pot over high heat and bring to a boil. Once the water is at a rolling boil, turn off the heat and cover the pot with the lid.

  3. Allow the egg to sit in the hot water for the follow times: 3 minutes for SOFT boiled; 6 minutes for MEDIUM boiled; 12 minutes for HARD boiled. Place in a cold ice bath afterwards

  4. In a bowl, add the cottage cheese.

  5. Add the salmon, peeled egg, tomatoes and cucumber on top.

  6. Add the sea salt and everything bagel seasoning.

Breakfast 2 – Raspberry Peanut Butter Protein Shake

Raspberry Peanut Butter Protein Shake

Ingredients

  • 1/2 cup raspberries
  • 1 tbsp peanut butter
  • 1 cup spinach
  • 4 oz almond mik
  • 2 oz water
  • 1 cup ice
  • 1 scoop vanilla protein powder

Instructions

  1. Add all ingredients to a blender.

  2. Blend until smooth. Add more ice or water as desired.

  3. Enjoy!

Breakfast 3 – Broccoli Cheddar Egg Bake

Cheddar Broccoli Egg Bake

Servings 4

Ingredients

  • 8 eggs
  • 1/4 cup egg whites
  • 1/2 large yellow onion
  • 2 cups broccoli, chopped
  • 5 slices bacon
  • 1/2 cup cheddar cheese
  • 2 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt

Instructions

  1. Preheat the oven to 375 degrees

  2. Cook the bacon in a pan until desired crispiness.

  3. Drain some of the bacon fat out of the pan but you can leave some in. Set as the bacon.

  4. Add the olive oil, broccoli and yellow onion to the pan. Sauté for 5-10 min until pretty soft. Toss with sea salt and garlic powder.

  5. In a bowl, whisk the eggs. Add the cheddar cheese and sea salt (leave some cheddar cheese for the top).

  6. Grease a large baking dish. Add the bacon, chopped into pieces and the veggies. Spread evenly. Pour the egg mixture on top.

  7. Sprinkle some more cheese on top and cook for 20 minutes up to 30 minutes.

  8. Let cool and cut into squares.

Breakfast 4 – Greek Yogurt with Fruit and Honey

Greek Yogurt with Fruit & Honey

Servings 1

Ingredients

  • 1 cup Greek yogurt (2%)
  • 1 cup strawberries
  • 1 tsp honey
  • 1 tsp chia seeds
  • 1 dash monk fruit extract (or stevia) (optional)

Instructions

  1. Add the greek yogurt, honey and monk fruit extract to a bowl. Mix well.

  2. Top the Greek yogurt with fruit and chia seeds.

  3. Enjoy!

Breakfast 5 – Loaded Veggie & Cheese Omelette

Loaded Veggie & Cheese Omelette

Servings 1

Ingredients

  • 2 eggs
  • 2 egg whites
  • 1/2 tbsp olive oil
  • 2 tbsp red bell pepper, chopped
  • 2 tbsp grape tomatoes, chopped
  • 2 tbsp onion, chopped
  • 1/4 cup spinach
  • 2 tbsp feta cheese
  • 2 tbsp cheddar cheese
  • pinch of sea salt
  • pinch of pepper

Instructions

  1. Whisk eggs and egg whites together in a bowl.

  2. Add the olive oil to a pan. Heat to medium heat.

  3. Add the onion, bell peppers and tomatoes. Cook for about 5-7 minutes or until soft.

  4. Add the spinach, salt and pepper and cook for a few more minutes.

  5. Reduce heat to medium/low, then pour eggs over the veggies.

  6. Allow bottom of eggs to slightly set about 2 to 3 minutes. With a spatula, gently push an edge of the egg up while tilting the pan to allow the liquid egg on top to flow underneath. Repeat this around the edge of the pan until no liquid is left.

  7. When the eggs are almost done cooking, add on the cheese and allow it to melt.

  8. Fold the omelette in half or into thirds (Pro-tip: Slide half of the omelette out of the pan and halfway onto a plate, then fold the remaining half over itself). Season with salt and pepper.

  9. Enjoy!
