With the wrong ingredients, muffins can be packed full of calories and poor nutrition. This clean recipe helps make banana chocolate chip muffins a guilt-free, healthy option. They are super easy to make and my boyfriend couldn’t help but scarf down three in a row (whooooppps).
Ingredients:
1 cup plain greek yogurt
2 ripe bananas
2 eggs
2 cup rolled oats
1/4 cup stevia (or sugar of your choice)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
Dark chocolate chips (about half a cup)
Bonus: add 1-2 tbsp of flaxseeds for some added fiber
Instructions:
1. Preheat oven to 375F.
2. Blend all ingredients except chocolate chips.
3. Pour into muffin cups then add about 5 chocolate chips to each.
4. Bake for 15-20 minutes or until a toothpick inseted into the middle comes out clean.
5. Enjoy.
