High protein low carb nachos you are going to love! If you haven’t made these before, you have to try them. Not only are they delicious but they are packed full of nutrients. They also reheat well after 1-2 day so don’t worry about having leftovers.

High Protein Low Carb Nachos
Ingredients
- 5 bell peppers (different colors)
- 1 jalapeno
- 1/2 cup cheddar cheese
- 1/2 cup black beans
- 1/2 cup corn
- 16 oz grass-fed ground beef
- 4 tbsp salsa
- 1 packet taco seasoning
Instructions

Heat a pan and spray with oil. Set to medium heat. Add the ground beef and break into pieces. Add the desired amount of taco seasoning.

Cook the ground beef in the pan until it is no longer pink on the inside. Add beans and corn to the pan and cook for a little longer.

While that's cooking, chop the bell peppers into slices and the jalapenos.

Preheat oven to 375F .

Add the bell pepper slices to a oven safe dish or baking pan. Add the cooked ground beef mixture on top. Top with the cheese.

Bake in the oven for 10 minutes.

Top with jalapeno slices and salsa. Enjoy!
