It may be holiday season but it doesn’t mean you have to fall out of your healthy lifestyle. Low carb pasta is always in season, especially when it’s made from organic vegetables.  Top it off with homemade turkey meatballs

 

Zucchini Pasta

 

What you need:

– 4 mid-size zucchini

– 2 tablespoon of oil

– Pinch of salt

– Pesto sauce or marinara sauce

 

Step 1: Peel the skin off the zucchini

Step 2: Using the vegetable slicer (like this one), turn the zucchini into spiral pasta  shapes (super easy)

Step 3: Sautée the zucchini in the olive oil and salt (I added mushrooms for an extra twist) until zucchini is well cooked (feels soft),

Step 4: Top with the pesto sauce or marinara sauce

 

Serving Size: 2 bigger side dishes

Calories per serving with Pesto Sauce: 265 calories

 

 

Turkey Meatballs

 

What you need:

– ½ cup onion

– 1 package ground turkey

– ½ tbp garlic

– 1 egg

– ½ cup cheese

– Ground pepper (to taste)

– Basil (to taste)

– Garlic Salt

– ( ¼ cup dried breadcrumbs if you want it to be more like the traditional meatballs but I left this out)

– Marinara Sauce (optional)

 

Step 1: Preheat oven to 350 degrees and chop the onions

Step 2: Mix the onions, egg, ground turkey, cheese, (breadcrumbs), and seasoning in a bowl

Step 3: Place the mixture in round balls on a glass pan and bake until the meat is cooked

Step 4: Smoother your meatballs in fresh marinara sauce.
