It’s that time of year again where pumpkin everything is in! So why not make it a healthy and delicious pumpkin recipe? These overnight oats are simple to make & packed with flavor. I love making a batch on Sunday and saving it for up to five days.
Here’s how I made them:
1. Add about 1/2 cup old fashioned oats to a 16 oz. mason jar.
2. Add 1/2 cup unsweetened almond milk, 2 tbsp. pumpkin purée, 1 tsp. vanilla extract & a little bit of stevia (or maple syrup, agave, honey etc.). Stir gently.
3. Top with cubed peaches.
4. Refrigerate overnight or for up to 5 days.
Fix Containers: 2 yellow, 1 purple.
The combination of pumpkin and peach make for the right amount of sweetness. I enjoy them cold but feel free to heat them up without the fruit.
