Craving that summertime creamy pasta? This zoodles recipe is the perfect solution to that usually high calorie picnic food. Celebrity trainer, Autumn Calabrese, shared this delicious recipe on her blog and I’m totally hooked!
(Makes about 2 servings)
Ingredients:
3 zucchini- cut into zoodles (noodles) using a spiralizer
1 green bell pepper finely chopped
1/2 white onion finely chopped
3 stalks celery finely chopped
3 sprigs fresh basil finely chopped
Fresh dill to taste
1 cup plain Greek yogurt (I used 2%)
2 Tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic salt
Instructions:
1. Mix the greek yogurt and dijon in a bowl.
2. Add the rest of the ingredients.
3. Pour over the noodles and mix evenly.
Fix container count about 1 green & 1 red per serving.
