Salad jars a weekly meal prep go-to of mine! They’re super easy and keep your salad ingredients fresh and the lettuce crisp at the top. Layer the wettest ingredients at the bottom starting with the dressing and stack the drier ingredients on the top. No more having to pack your dressing separate when you make salad jars! I usually pour it into a bowl later when I go to eat it.
Layers bottom to top:
Balsamic vinaigrette
1/2 cup cherry tomatoes
1/4 cup corn
1/4 cup white beans
1/4 cup white onion
1/4 mushrooms
3/4 cup shredded chicken
1 cup mixed greens
Check out this video to see how to stack it. P.S. enjoy my awkward dance at the end 😉
For those on the 21 Day Fix Eating Plan, this recipe is equal to 1 orange, 2 green, 1 yellow, 1 red.
